I have two friends who had a baby late last week and I am making my favorite mexican casserole to take to them today. It's not spicy, so no worries for the new moms, but you can adjust the heat if you want! Someone made this for me when I had my first baby and it's been a favorite ever since!
Mexican Casserole
1 can black beans, drained
1 can corn, drained
8 oz. sour cream
8 oz. picante sauce
1 can Rotel tomatoes
2 cups grated cheddar cheese
1/4 teaspoon black pepper
2 cups cooked rice
1 lb. cooked hamburger or chicken
Mix all of the above and place in a 9x13 casserole dish.
Sprinkle the top with the following:
8 oz. grated monterrey jack cheese
1 can sliced black olives
sliced green onions
Bake at 350 degrees for 50 minutes. Adjust the heat by using spicier picante sauce and spicier Rotel tomatoes!
