I still haven't decided between fish, taco soup, or chicken and the clock is ticking away! What are you having for dinner?

Is taco soup like tortilla soup? I LOVE tortilla soup. I've been lazy all day and don't feel like cooking. My husband is bringing home Portillo's (Chicago style hot dogs).

Maybe I'll make Tortilla Soup next week! Yum, shredded chicken...

Here's the Taco Soup recipe I use:

TACO SOUP
1 lb lean ground beef (or turkey)
1 onion, chopped
1 pkg taco seasonings
1 pkg dry Ranch seasonings
2 large cans diced tomatoes, undrained
1 can Rotel tomatoes, undrained
1 can black beans
1 can pinto beans
1 can whole kernel corn

Brown meat and onion. Drain. Add seasonings. Drain beans and corn. Add to meat along with tomatoes. Simmer until well blended and hot. Eat and enjoy.

Add a bit of grated cheese or sour cream and this simple soup is perfect for cold nights.

We make the same Taco Soup, but instead of regular corn, we use hominy, which gives it a lot more texture. I love, love, love it!

We grilled a pork tenderloin Sunday and made stuffed peppers so we'll be alternating those meals this week.

I haven't made stuffed peppers in a long time! That sounds good. Do you make them mexican-style, italian-style, or some other way?

We ended up with fish (Tilapia) last night.

wow, I need to step up my game in the kitchen! I already made chili again! My rotation/menu needs to be a little bigger. I was glad to be reminded of stuffed peppers again, too. Completely forgot about them!

I am soooo guilty of getting into a menu rotation slump. I've learned to keep a list of probably 20 dinner ideas on the Notes section of my cell phone. That way, if I run to the store and haven't planned anything, I still have some of our classic dish ideas very handy.

Now that's a good idea. I can't tell you how many times I've just stared around at the store drawing complete blanks. I'm going to enter stuff into my phone as I think of them all day today!

My son had soup at his friends house and he wants me to make it. I think it's a tortilla type of soup with chicken broth but he said it had chicken and meatballs in it. Any ideas? Any tortilla soup recipes would be helpful too.

I usually buy the ground chicken breasts at HEB and use those for meatballs anyways. If you have a tried and true tortilla soup recipe I'd love to have it.:)
