Would anyone care for a little fresh, organic crookneck squash and zucchini? One of my husband's colleagues has a large garden and has been bringing everyone boxes of fresh vegetables. They're healthy but need cleaning.

As a side note, does anyone have a good recipe for squash and zucchini that I can make in a large batch and freeze?

Google 'chocolate zucchini' cake. There are lots of recipes out there, it tastes great the children will devour it. Just don't tell them there is zucchini in it.

You might also google Zuchinni Nut Bread. I'm not much of a baker, but even I have had some luck with a loaf of Zuchinni Nut Bread.

I've never tried freezing a squash recipe. I'm the only person in the family that really likes squash, so when I cook yellow squash, I usually get just enough for myself. Luby's has a creamed squash that I tried to duplicate at home, but it didn't really come out the same. I think I would worry about cooked squash getting "runny" when it is thawed out, if it was frozen. I wonder if you could just slice it, blanch, then freeze for later cooking?

I'll take some. We love to grill squash and I have a great recipe for zucchini bread. And, if you have any tomatoes left, I will take some of those and some basil to make some salsa and pesto.

I'm in a cooking (okay, EATING) mood. :)

Slice it up and grill it! The zucchini OR the squash. With some seasonings, they are wonderful.

Too late, my husband (the only child in the household) has already seen the recipe and informed me that there's no way in hell (paraphrased) he would eat that.

Yeah, we like it on the grill also but Roger isn't a big fan of squash or zucchini and I am so I have to devise some way of preserving as much as possible. He'll eat ratatouille made with it - only because it's the only thing on the menu that night unless he wants to cook - but mostly doesn't care for it.

I hadn't thought of simply blanching it and canning or bagging it but I'll have to look into that. Thanks for the idea!

I'm the only one who likes squash so I won't ask for any. DH will eat grilled zuchinni and it seems like I had that zuchhini bread one time and he loved it...but that's about it.

You can blanch the squash and freeze it if you have too much. I have one of those vac and seal machines and we vac pack almost everything.

My fav way of eating yellow or white squash is the simplest way. I clean and peel them and cut them up in little uniform pieces so they cook evenly. Chop up some onion and put a little EVOO in the pot and saute the onions til soft and beginning to brown and then dump in squash, saute a little to get coated with the oil and then put a bit of water in and simmer it til squash is mushy. Then drain and put in a pat or 2 of butter salt and pepper and enjoy!

I do the same thing cgwoolf does. Zucchini, yellow squash, onion sauteed in some EVOO. Just before I pull them off the fire, I dust the whole thing with Tony Chachere's. Little Bit, who is 18 mos, loves to eat it this way.

I'm going to have to look for a recipe for zucchini bread. I have a bunch of bananas I'm about to make into banana bread, but zucchini bread sounds good too.

If you still have quite a bit, Sysgoddess, I'd be willing to take some off your hands.

I would have never guessed!

I'm sitting here eating pico de gallo made with fresh tomatoes from SysGoddess! I stopped by the store on the way home and bought Cilantro. Yummy. Tomorrow, we will grill using the rosemary! I can't wait to try it.
